chickweed (stellaria media) – a short, mat-forming annual known for its edible & medicinal attributes. chickweed is a highly nutritive hardy spring green. once you have a patch established somewhere where it likes to be (hint: nitrogen rich soil) it will self-seed and reappear each year. used in herbal medicine for it's soothing, cooling and mildly mucilagenous characteristics. chickweed makes delicious pestos and is a tasty and nutritious addition to salads, soups and stir-fries.
